Superlative palate length and finesse in a Chardonnay, longer evolved on the vine, and judiciously handled in the winery in deference to the signature of its fruit. Avoidance of malolactic fermentation preserves core varietal aromas and flavors, concentrated by extended lees aging. Barrel fermented and aged for a foundation, not a ceiling, in 2nd/3rd-use barrels for subtle support of texture, volume and aging potential. An ample but always vibrant wine of natural harmony with foods, without the heat, weight or ersatz lushness common among New World Chardonnay. |
Vintage Factors: A long and cool growing season gave beautiful concentration in aromatics and ripening of the Reserve Chardonnay. We are recommending this bottling as one of our finest Chardonnay of the last decade. |
Vinification: 100 percent Chardonnay, fermented in 2nd/3rd-use French and American oak barrels at 70 degrees F, aged on the lees in similar older oak and some new French oak for up to 7 months. Malolactic fermentation is avoided. |
Analysis: 13% Alcohol 0.4% Residual Sugar 0.65% Total Acidity |
Tasting Notes: The wine is exploding with rich and complex flavors of pear, apple, and vanilla, a lavishly texured palate. Good acidity is well proportioned to the generous body and allows extended cellaring. |
Optimum Drinking: Very approachable immediately, the wine does evolve further in its first 3 years, and can be held longer. |
Food Pairings: Parmesan & White Wine Risotto with Sweetbreads Bisque of Fresh Eastern Shore Shrimp Classic Vitello Tonnato |
