Chef Melissa Close Hart announces the Calendar of Cooking Classes she will be conducting in 2012.
Classes convene at 6:30pm, by reservation only, with each enrollment limited to 12.
Each member of the class will be invited to participate,
with all product being created to take home.
Sessions should be expected to last 3½ hours, including a meal of light fare with wine pairings.

~ March 13th, Basics of Pasta Making, $65 ~
Learn how to make two different types of fresh pasta dough, a variety of fillings, sauces and toppings. Also learn about a few different shapes of pasta and when to use which shape! Take home raviolis to share with friends and family! Taught by Chef Melissa Close-Hart.
~ April 10th, Seafood Preparation & Wine Pairing, $120 ~
NEW THIS YEAR: Chef Melissa Close-Hart will teach about a variety of seafood preparations and Master Sommelier Alessandro Medici will show how to pair the proper wine! We will show how one dish can be paired with different wines to highlight different flavor profiles of the food and wine. We will be opening plenty of different wines to sample and learn about. All the recipes and techniques needed for a summer party of 12 people. Many of the dishes can be made ahead of time so that the host/hostess can also join in the celebration! Master Sommelier Alessandro Medici will teach about summer wines and how to pair them with summer dishes. We will be opening plenty of different wines to sample and learn about. ~ August 14th, Knife Skills, Care & Sharpening, $65 ~
NEW THIS YEAR: Ever wondered how chefs and foodies pick a knife. Sous Chef Mike Yager will walk you through how to select a knife, how to take care of it once you bring it home, and how to properly use it. Chef Yager will teach basic knife skills (learn how to make a perfect julienne or small dice). Also learn a few recipes for dipping sauces – we will be cutting quite a few veggies! Dinner with wine will be provided after the class. Taught by Sous Chef Mike Yager.
~ September 11th, Basic Italian Breads, $65 ~
Learn how to make four different styles of bread from focaccia to sour dough. Plenty of other recipes will be provided for other types of breads. We will discuss the process of mixing, rising, and baking all forms of breads. Take home all the breads you make! Taught by Chef Melissa Close-Hart.
~ October 9th, The Art of Charcuterie & Wine Pairing, $120 ~
